Why Are Industrial Chickens Preserved With Saltwater Solution?

Plumping, often known as injecting in the business, has been practised for a while. To keep fresh chicken juicy and flavourful, a saltwater solution is injected into it. There is a long list of ingredients that make up this solution which can be 30% or more of the weight of the chicken. Several studies have indicated that the weight can reach as high as 50%, without any noticeable differences. Breeders have been raising chickens with excessive amounts of breast meat for some time (more muscle and less fat), which has lead to dryer, less flavourful birds. Plumping prolongs the shelf life of the chicken products being sold.

A recent study revealed that even when saline injections were administered, the flavour was still effected, therefore “natural flavour” was added in the form of broth, lemon concentrates, and corn syrup or other types of sugar. To help the chickens retain water while being shipped and later cooked, sodium phosphate was initially also added as a binder. Potassium phosphate was used in place of this component to enable “low sodium” labelling. 

Since potassium phosphate intensifies the bitterness of meat, more “natural flavours” were required to cover up the taste. So long as all of the ingredients are legitimately regarded as natural, you will still see the phrase “All-Natural” on the label.
